Banana Sushi Rolls: Sweet No-Bake Fruit Dessert Ideas

Kids won’t be able to resist this banana sushi! It’s simple — roll, cut and top with sliced strawberries and kiwi for color and flavor. These rolls keep well in lunchboxes. If your school is nut-free, use soy butter or sunbutter instead of peanut butter.

I collect easy back-to-school recipes so I’m ready when it’s time to pack lunches or snacks. These Banana Sushi Rolls are quick, kid-friendly, and perfect for lunchboxes or an after-school bite. My kids love helping make them, which makes prep time more fun and gets them involved with healthy choices.

The recipe is very flexible. For nut-free schools, swap peanut butter for sunbutter or soy butter. Add different fruits or berries for variety, or sprinkle crushed peanuts or almonds if nuts are allowed. One large tortilla rolls around a banana and can be sliced to split between two lunchboxes or included in a bento. I often pair the rolls with veggies, cheese, dried fruit, and yogurt for a balanced lunch.

Ingredients

  • 1 whole wheat tortilla
  • 3 Tbsp. peanut butter, divided (or sunbutter/soy butter for nut-free)
  • 1 banana, peeled
  • 1 strawberry, sliced
  • ½ kiwi, sliced (SunGold or your preferred variety)
  • 1 Tbsp. shredded coconut

Instructions

  • Lay the tortilla flat. Spread with half of the peanut butter (or alternative). Place the banana at one edge and roll up tightly. Slice into even rounds and arrange strawberry and kiwi slices on top.
  • Microwave the remaining peanut butter on HIGH for about 30 seconds, or until soft and pourable. Drizzle over the banana sushi rolls.
  • Sprinkle with shredded coconut and serve. Pack in a lunchbox with an ice pack if needed.
