These energy balls use a simple ingredient list: muesli (a mix of whole grains, nuts, seeds, and dried fruit), almond butter for protein, honey and maple syrup to bind and sweeten, flaxseed meal for omega-3s, and chopped almonds for rolling. Toasting the muesli and almonds enhances the flavor, but you can skip toasting to save time — the recipe still comes together in under 10 minutes if needed.

Description

Hearty muesli, protein-rich almond butter, omega-rich flaxseed meal, honey, and maple syrup combine into energy-boosting balls with a crunchy almond exterior.

Ingredients

Units

  • 2 cups Bob’s Red Mill Old Country Style Muesli
  • ¾ cup slivered almonds
  • 1 cup almond butter (or other preferred nut butter)
  • ½ cup honey
  • ½ cup flaxseed meal
  • 2 tablespoons maple syrup

Instructions

  1. Preheat the oven to 350°F (175°C). Spread the muesli on one baking sheet and the slivered almonds on another in even layers. Toast for about 8 minutes until golden and fragrant. Remove and allow to cool.
  2. Roughly chop the cooled almonds and place them in a shallow bowl for rolling.
  3. In a large bowl, combine almond butter, honey, flaxseed meal, and maple syrup until smooth. Stir in the cooled muesli until evenly mixed.
  4. Use a 2-tablespoon cookie scoop (or a spoon) to portion the mixture. Roll each portion between your palms to form a ball, then roll the ball in the chopped almonds to coat.
  5. Place finished balls on a lined baking sheet and chill for at least 30 minutes to firm. Store refrigerated for up to 10 days.
