I make this pudding for special occasions and for everyday treats. The combination of avocado and full-fat coconut milk creates an incredibly smooth texture, and the avocado flavor is completely muted by the chocolate, so the result tastes indulgent while remaining nutrient-dense.

I sweeten the pudding with honey, which I prefer for its flavor and natural benefits. If you can get raw, local honey, it’s even better. For the chocolate, choose a high-quality dark chocolate or semi-sweet chocolate with at least 70% cocoa for the most antioxidants and the least added sugar.

Description

This pudding is made with just five ingredients—dark chocolate, coconut milk, avocado, honey, and cocoa powder. It takes only minutes to melt the chocolate and blend the ingredients, then a short chill in the refrigerator produces a silky, antioxidant-rich pudding that’s Paleo and dairy-free.

  • ½ cup dark chocolate chips
  • ½ cup plus 2 tablespoons full-fat coconut milk, room temperature
  • 4 medium ripe avocados, pitted and peeled
  • ½ cup honey
  • ½ cup organic cocoa powder

Instructions

  1. Melt the chocolate in the top of a double boiler over simmering water, stirring constantly until smooth. Remove from heat and let cool for about 5 minutes.
  2. Or melt the chocolate in the microwave in a wide, shallow bowl: heat on medium-high for about 1 minute, stir, then continue heating in 15–20 second intervals, stirring between each, until fully melted and smooth.
  3. In a blender or food processor, combine the avocado flesh, coconut milk, honey, and cocoa powder. Blend until completely smooth, scraping down the sides as needed.
  4. Stir the melted chocolate into the avocado mixture until evenly combined. Transfer to serving dishes and refrigerate for about 45 minutes or until chilled and firm. Serve chilled.
