Tomatoes release moisture and can shorten the salad’s shelf life, so for best results prepare components ahead of time rather than assembling everything days in advance. Store cooked eggplant, drained chickpeas and chopped vegetables separately in airtight containers. Keep whole cherry or grape tomatoes until you’re ready to eat, or add tomatoes and dressing at the last minute.

You can assemble the salad in jars for easy grab-and-go meals. Layer olive oil or dressing first, then eggplant, chickpeas, feta and heartier vegetables, and top with delicate greens and tomatoes when ready to serve. Properly stored, layered jars can last 2–3 days in the refrigerator; toss everything together just before eating.
