Spaghetti bolognese is a beloved family classic in our house — easy to make, full of flavor and satisfying for all ages. We often boost the dish with plenty of vegetables to keep it wholesome and colorful. Red peppers are a favourite with the kids, so it’s common to find two or three chopped into the sauce. Mushrooms are less popular at the table, so I usually chop them finely and blend them into the mix so they contribute texture and umami without being obvious. Sometimes we simmer bolognese from scratch, but on busy days a good-quality jar of sauce helps us get a delicious meal on the table quickly.
Over the years we’ve refined our method. Here are tried-and-true tips for a perfect spaghetti bolognese:
- Cook the onions until very soft and transparent before adding meat or sauce. Properly softened onions build a sweeter, richer base for the bolognese.
- If you like a touch of heat, finely chop one red chilli and stir it in near the end of cooking for a fresh, bright kick.
- While spaghetti looks traditional, it can be messy and slips off the fork. Fusilli or other shaped pasta hold the sauce better and make each bite more balanced.
- Make a double batch and refrigerate leftovers. Bolognese often tastes better the next day once the flavours have had time to meld.
One of our favourite ways to use leftover bolognese is to make Bolognese Parcels — crispy, handheld sandwiches made with wraps and cheese. They’re ideal for lunches, picnics, or an easy snack on the go. These parcels are quick to assemble and cook, and they travel well while keeping a comforting, familiar taste.

INGREDIENTS
- 1 tablespoon vegetable oil
- 1 small onion, finely chopped
- 500g lean minced beef
- 2 medium red peppers, diced
- 150g chestnut mushrooms, sliced (add more if you enjoy mushrooms)
- 1 jar bolognese sauce (choose your preferred brand)
- 8 wholemeal wraps
- 100g medium cheddar, grated
