No Bake Cherry Chocolate Chip Chia Energy Bites (Vegan, Gluten Free, Dairy-Free, One Bowl)

One-bowl no-bake bites loaded with cherries, chocolate, oats, coconut and chia — a quick, wholesome snack that’s vegan, gluten-free, and dairy-free.

Ingredients 

Dry Ingredients

  • ½ cup dried cherries, chopped
  • ¼ cup vegan chocolate chips, mini and regular
  • ¾ cup gluten-free rolled oats
  • ½ cup unsweetened coconut, shreds or flakes
  • ¼ cup chia seeds

Wet Ingredients

  • ¾ cup natural unsalted creamy almond butter, (mine is very liquidy)
  • ¼ cup pure maple syrup

Optional Topping

  • 1 tablespoon dried cherries, chopped
  • 1 tablespoon vegan chocolate chips, mini and regular

Instructions 

  • In a large bowl, combine all dry ingredients: chopped dried cherries, chocolate chips, rolled oats, unsweetened coconut, and chia seeds.
  • Add the almond butter and maple syrup. Use a sturdy spatula to stir and fold until everything is evenly incorporated. The mixture should hold together when pressed.
  • Scoop 1 to 2 tablespoons of the mixture and roll it between your hands to form bites. Optionally press extra chopped cherries or chocolate chips onto the surface. Store in an airtight container and enjoy.

Notes

– Store in an airtight container for up to 2 weeks; bites are soft but firm up after the first day.
– This recipe is adapted from similar no-bake bites and works well with many nut butters and mix-ins depending on taste and allergies.
