Lamb koftas are a Mediterranean and Middle Eastern-style preparation made from minced meat mixed with onion, garlic, herbs, and warm spices, then formed into small patties or logs and cooked until charred and juicy. Grilling is ideal — charcoal adds a smoky layer that’s hard to beat — but broiling works well if you can’t grill outdoors. For a cooking-class demonstration I used the broiler; it mimics the direct heat of a grill and gives a nice exterior sear.

If you miss the true grill smoke, adding a touch of smoked paprika to the mix helps impart a smoky note without needing an open flame. It won’t replace char from live fire, but it adds balance and depth to the meat.

Shape is mostly personal preference. Koftas can be round, oblong, or formed onto skewers. I avoid tight logs because the shape can look unappetizing after cooking; instead I form slightly flattened ovals with tapered ends. They will firm up, shrink slightly, and become a bit thicker as they cook, so account for that when shaping.

Ingredients

  • 1 large shallot, roughly chopped
  • 2 cloves garlic, smashed and peeled
  • 1 small handful cilantro leaves and tender stems
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1 tablespoon pomegranate molasses
  • 1/4 cup breadcrumbs (gluten-free or regular)
  • 1 pound ground lamb

Optional for serving: green tahini, lemon tahini, tzatziki, flatbreads, fresh herbs, lemon wedges, pomegranate arils.

Instructions

  1. Place a rack in your oven in the highest position and turn on the broiler. If grilling, preheat to medium-high.
  2. In a food processor, pulse the shallot, garlic, cilantro, cumin, coriander, smoked paprika, salt, pomegranate molasses, and breadcrumbs 6–8 times until coarse and paste-like.
  3. Add the ground lamb and pulse about 8 times, until the mixture is evenly combined but not overworked.
  4. Divide the mixture and form into 8 patties or ovals. Arrange them on a rimmed baking sheet if broiling. Broil for about 5 minutes, flip, then broil an additional 2–3 minutes, until cooked through. If grilling, cook 3–4 minutes per side until charred and cooked to your liking.
  5. Serve hot with your choice of tahini, tzatziki, flatbreads, herbs, lemon wedges, and pomegranate arils.
