I love a simple, comforting bowl of oatmeal. It’s quick to prepare but can be full of flavor when you use the right ingredients and give it time to cook slowly. This pecan pie–inspired oatmeal combines steel-cut oats with milk, maple syrup, brown sugar and cinnamon, and it simmers in the slow cooker until creamy and richly flavored. Using all milk rather than a water-and-milk mix makes the texture extra smooth and satisfying. Be warned: one serving is very filling.
I hadn’t tried pecan pie for many years even though pecans are my favorite nut. A small personal pie I picked up recently gave me the idea to recreate those flavors in oatmeal. The result is a breakfast that captures the sweet, nutty taste of pecan pie without the fuss of baking a pie.

Ingredients
Oatmeal
- 2 cups steel cut oats
- 4 cups milk
- 1/4 cup pure maple syrup
- 1/4 cup brown sugar
- 1 tsp cinnamon
Toppings
- Chopped pecans
- Brown sugar (for sprinkling)
Instructions
- Combine the steel-cut oats, milk, maple syrup, brown sugar and cinnamon in the slow cooker.
- Set the slow cooker to high and cook for 2–3 hours (or low for 5–6 hours), stirring occasionally to prevent sticking.
- Spoon into bowls, top with chopped pecans and a sprinkle of brown sugar, and serve warm.
