Description
Hearty muesli, protein-rich almond butter, omega-rich flaxseed meal, honey, and maple syrup combine into energy-boosting balls with a crunchy almond exterior.
Ingredients

- 2 cups Bob’s Red Mill Old Country Style Muesli
- ¾ cup slivered almonds
- 1 cup almond butter (or other preferred nut butter)
- ½ cup honey
- ½ cup flaxseed meal
- 2 tablespoons maple syrup
Instructions
- Preheat the oven to 350°F (175°C). Spread the muesli on one baking sheet and the slivered almonds on another in even layers. Toast for about 8 minutes until golden and fragrant. Remove and allow to cool.
- Roughly chop the cooled almonds and place them in a shallow bowl for rolling.
- In a large bowl, combine almond butter, honey, flaxseed meal, and maple syrup until smooth. Stir in the cooled muesli until evenly mixed.
- Use a 2-tablespoon cookie scoop (or a spoon) to portion the mixture. Roll each portion between your palms to form a ball, then roll the ball in the chopped almonds to coat.
- Place finished balls on a lined baking sheet and chill for at least 30 minutes to firm. Store refrigerated for up to 10 days.
