One of the best things about sheet pan pancakes is how customizable they are. For this batch I sprinkled sugar-free chocolate chips on top, but you can also add sugar-free sprinkles, fresh blueberries, raspberries, or chopped strawberries. You can divide the batter on the sheet pan to create several flavor sections at once — great for households with varying preferences.

How to make Keto Sheet Pan Pancakes
Ingredients
- 3/4 cup coconut or almond milk
- 4 medium eggs
- 4 tbsp butter (or coconut oil for dairy-free)
- 1 1/2 tsp vanilla extract
- 2 cups almond flour
- 2 tbsp coconut flour
- 1/2 tbsp baking powder
- 1/4 cup sugar-free chocolate chips (optional)
- Pinch of sea salt
Instructions
- Preheat the oven to 400°F (200°C). Line a 9×13-inch sheet pan with parchment paper and lightly grease the paper or pan.
- In a large mixing bowl, whisk together the milk, eggs, melted butter (or coconut oil), vanilla extract, and a pinch of sea salt until smooth.
- Fold in the almond flour, coconut flour, and baking powder. Stir until the batter is even and free of lumps. The batter should be pourable but thick enough to hold together.
- Spread the batter evenly across the prepared sheet pan. Sprinkle the top with sugar-free chocolate chips or your choice of mix-ins.
