How to make Keto Sheet Pan Pancakes

Ingredients

  • 3/4 cup coconut or almond milk
  • 4 medium eggs
  • 4 tbsp butter (or coconut oil for dairy-free)
  • 1 1/2 tsp vanilla extract
  • 2 cups almond flour
  • 2 tbsp coconut flour
  • 1/2 tbsp baking powder
  • 1/4 cup sugar-free chocolate chips (optional)
  • Pinch of sea salt

Instructions

  1. Preheat the oven to 400°F (200°C). Line a 9×13-inch sheet pan with parchment paper and lightly grease the paper or pan.
  2. In a large mixing bowl, whisk together the milk, eggs, melted butter (or coconut oil), vanilla extract, and a pinch of sea salt until smooth.
  3. Fold in the almond flour, coconut flour, and baking powder. Stir until the batter is even and free of lumps. The batter should be pourable but thick enough to hold together.
  4. Spread the batter evenly across the prepared sheet pan. Sprinkle the top with sugar-free chocolate chips or your choice of mix-ins.
  5. Bake for about 15 minutes, or until the edges are lightly golden and the center is set. Allow the pan to cool for five minutes before slicing into squares. Serve warm.
