How To Make Hostess Cupcakes
Step 1: Make the cupcakes

Step 2: Make the Italian meringue filling
Beat the egg whites with an electric mixer until they reach stiff peaks. In a small saucepan, combine the sugar and water and heat to 246°F–250°F (119°C–121°C), stirring only until the sugar dissolves. With the mixer running, slowly pour the hot sugar syrup into the whipped egg whites in a thin stream. Continue beating until the mixture cools and becomes glossy and stable. Transfer to a piping bag for filling.


Step 3: Make the ganache
Place the dark chocolate chips and heavy cream in a heatproof bowl. Warm together until the chocolate melts and the mixture is smooth. You can microwave in short bursts, stirring frequently, or heat the cream and pour over the chips, then let sit a few minutes before stirring until smooth. Keep the ganache warm for dipping.


Step 4: Core and fill the cupcakes
Use a cupcake corer or a small spoon to remove the center from each cooled cupcake. Pipe about 1 tablespoon of the Italian meringue into each cavity. Replace the small cake pieces you removed to cap the filling. Dip the top of each cupcake into the warm ganache so it gets evenly coated. Set aside to let the ganache set.


Step 5: Make the decorator’s frosting
In a small bowl, beat the vegetable shortening and sifted powdered sugar together until smooth. Add milk a little at a time until you reach a pipeable consistency. Transfer the frosting to a piping bag fitted with a #4 round tip.
