📖 Recipe
Yield: 4-6
Cheesy Grits
Ingredients
- 1 ½ cups chicken broth
- 1 ¾ cups milk
- 1 clove garlic, minced
- ½ teaspoon salt
- ½ teaspoon crushed red pepper (optional)
- ¾ cup stone-ground grits (not instant or quick cooking)
- 1 to 1 ½ cups sharp cheddar cheese, grated
- 1 tablespoon butter (optional)
- 1 tablespoon heavy cream (optional)
Instructions
- In a medium saucepan, bring the chicken broth and milk to a gentle boil.
- Stir in the minced garlic, salt, crushed red pepper (if using), and the grits. Cover, reduce the heat to low, and simmer for about 20 minutes, lifting the lid occasionally to whisk and prevent lumps.
- When the grits are tender and creamy, remove the pan from the heat. Stir in 1 cup of the grated cheddar, then add the butter and heavy cream if using. Taste and fold in additional cheese to reach your preferred richness and texture.
