A Note About Oats
I tested both instant (quick-cook) oats and rolled oats. I personally preferred the texture from quick-cook oats, which produced a softer cookie, but rolled oats will work if you prefer a chewier texture. Either option is fine — expect a slight difference in mouthfeel.
Cookies + Ice Cream

Golden syrup cookies make excellent ice cream sandwiches. The buttery caramel notes pair especially well with vanilla ice cream. For best results, assemble and freeze the sandwiches a few hours before serving so the ice cream firms up and they’re easier to eat.

How to Make Golden Syrup Cookies — 3 Ways
These cookies are straightforward and reliable. You will need golden syrup — you can buy it or prepare it ahead of time if you prefer homemade. If making your own syrup, allow it to cool before using in the dough.

Preheat your oven to 325°F (160°C). In a medium bowl whisk together the flour, baking soda, baking powder, and salt.
In a small saucepan over low to medium heat, melt the butter with the sugar and golden syrup, stirring until the sugar dissolves. Remove from heat and stir in the vanilla.
Pour the melted mixture into the dry ingredients and stir with a wooden spoon until combined. Add the oats and mix until the dough is uniform; it will be soft.

Scoop or roll the dough into balls and place on a prepared baking sheet. Bake for about 8–10 minutes, until the edges are golden brown. Remove from oven and let the cookies rest briefly on the baking sheet to firm up, then transfer to a wire rack to cool.
Cookie Variation #2: Golden Syrup with Chocolate Chips
Stir chocolate chips into the dough before portioning and baking, then follow the same baking directions as above.
Cookie Variation #3: Golden Syrup with Chocolate Chips and Pecans
Mix chocolate chips and chopped pecans into the dough, then scoop and bake as directed.
Should I Chill the Dough?
Chilling the dough for 15–30 minutes is optional. It can make the dough easier to roll but didn’t produce a dramatic difference in my tests. If you plan to make all three variations from one batch and you want to chill the dough, divide it into three portions and add chips and nuts while the dough is at room temperature — it’s easier to mix them in that way.

Ingredients
- ¾ cup (125 grams) all-purpose flour
- 1 ½ tsp baking soda
- 1 ½ tsp baking powder
- ¼ tsp salt
- 7 TBSP (100 grams) unsalted butter
- ¼ cup (60 grams) sugar
- 3 TBSP golden syrup
- ½ tsp vanilla extract
- 1 cup (100 grams) quick-cook (instant) oats
- Optional: ½ cup (90 grams) chocolate chips
- Optional: ¼ cup (30 grams) chopped pecans
Instructions
- Preheat oven to 325°F / 160°C.
- Mix flour, baking soda, baking powder, and salt in a bowl and set aside.
- Melt butter with sugar and golden syrup in a saucepan over low heat, stirring until the sugar dissolves.
- Remove from heat, stir in vanilla, then add to the dry ingredients and mix with a wooden spoon.
- Add the oats and stir until combined.
- Fold in chocolate chips and/or pecans if using.
- Roll the dough into 24 balls (or use a cookie scoop). Optionally chill for 15–30 minutes.
- Bake for 8–10 minutes, until edges are browned. Remove from oven and let rest briefly on the baking sheet, then transfer to a wire rack to cool.
- Store cooled cookies in an airtight container in the fridge or freezer.
Notes
I preferred quick-cook oats for a softer texture, but rolled oats can be used if you prefer a chewier cookie.
