Schroeder’s Piano Key Cookies

Are you planning to see the new Peanuts movie? My kids have been excited for its release, and I’m looking forward to it too. I grew up with Charlie Brown and the gang, so these characters bring back fond memories. My children love the classic holiday specials—since Halloween we must have watched It’s the Great Pumpkin, Charlie Brown countless times. We even DVR’d it so it will probably pop up again around Easter.

With the movie hitting theaters today, some blogging friends and I put together a collection of Peanuts-inspired recipes and ideas. I’m joining a new monthly series, so expect more posts like this.

One of my favorite Peanuts characters is Schroeder. I’m not a professional cookie decorator, but I was pleased with how these piano key cookies turned out. My kids thought they were super fun, which is what mattered most. In my version I used raspberry extract instead of lemon, but you can use any clear extract you prefer.

Schroeder’s Piano Key Cookies

Ingredients

For the cookies

  • 1 ½ cups unsalted butter, softened
  • 2 cups granulated sugar
  • 4 eggs
  • 1 teaspoon vanilla extract
  • 5 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt

For the royal icing

  • 4 egg whites
  • 4 cups sifted powdered sugar
  • 1 teaspoon lemon extract, you can substitute any clear extract

Instructions

For the cookies:

  • In a large bowl, cream together the butter and sugar until smooth. Beat in the eggs and vanilla. Stir in the flour, baking powder, and salt. Cover and chill the dough for at least one hour or overnight.
  • Preheat the oven to 400°F. Roll the dough on a floured surface to 1/4 to 1/2 inch thick. Cut into rectangular shapes. Place cookies 1 inch apart on ungreased baking sheets.
  • Bake for 6 to 8 minutes, then cool completely.

For the royal icing:

  • Beat the egg whites in a clean bowl at high speed until foamy (use only fresh, uncracked eggs). Gradually add the sifted powdered sugar and the lemon extract. Continue beating at high speed until the icing is thickened.

To assemble the cookies:

  • Tint half of the royal icing black and transfer it to a piping bag.
  • Use the black icing to outline the rectangles and sketch the black keys, following the photos as a guide.
  • Place the white icing in another piping bag and fill in the keys. Use a toothpick to spread icing into corners if needed.
  • Allow the icing to harden before serving.

Notes

  • Make a variety of key sizes to mimic a real keyboard for a more realistic look.
