I listened to that voice, pulsed the carrots in the food processor to save time, and whisked together a cake that turned out tender, moist, and warmly spiced. The best part? This rendition uses only 1/3 cup of oil. It’s a small detail, but paired with the carrots and a touch of Greek yogurt, it makes the cake feel lighter without sacrificing flavor or texture.

The maple cream cheese frosting is a standout—rich, smooth, and perfectly balanced with maple syrup—but truthfully this cake can stand on its own. It’s flavorful enough to be enjoyed plain, lightly dusted with powdered sugar, or dressed up with frosting for a special occasion. I like to imagine baking it in a loaf pan for breakfasts and afternoon tea, saving the frosting for moments that feel celebratory. Then again, a random Thursday can easily become a party for one.

Spiced Carrot Cake with Maple Cream Cheese Frosting
Makes one 8 x 8 cake; enough frosting for the cake and a little extra
This cake is adapted from a classic recipe and updated for everyday baking: modest oil, a hit of Greek yogurt for moisture, and a warmly spiced batter that highlights fresh carrots.
For the cake:
1 1/3 cups all-purpose flour
1/2 cup granulated sugar
1/2 cup brown sugar, packed
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 teaspoon finely ground black pepper (optional, for depth)
1/3 cup vegetable oil
1/3 cup plain Greek yogurt
3 large eggs
Seeds from 1 vanilla bean (or 1 teaspoon vanilla extract)
1 1/2 cups finely shredded carrots (use a food processor for speed)
For the frosting:
5 tablespoons unsalted butter, softened
8 ounces cream cheese, softened
2 cups powdered sugar, sifted
1/4 cup pure maple syrup
Preheat the oven to 350°F (175°C). Line an 8 x 8 inch baking pan with two sheets of parchment, overlapping so the cake can be lifted out easily, and butter the parchment.
In a large bowl, whisk together the flour, granulated and brown sugars, baking soda, spices, salt, and black pepper if using. In a separate bowl, whisk the oil, Greek yogurt, eggs, and vanilla until smooth. Fold the wet ingredients into the dry mixture until just combined, then stir in the shredded carrots until evenly distributed. Pour the batter into the prepared pan and bake for 45–50 minutes, or until a toothpick inserted in the center comes out clean.
Allow the cake to cool completely in the pan before frosting. If you prefer a lighter finish, simply dust the top with powdered sugar and slice when cool.
To make the frosting, beat the softened butter and cream cheese together until smooth and creamy. Gradually add the powdered sugar and beat until fully incorporated. Mix in the maple syrup and taste, adjusting sweetness if desired. Chill the frosting for about 20 minutes to firm it slightly, then spread evenly over the cooled cake.

This carrot cake keeps well, covered, in the refrigerator for several days. Serve it with tea or coffee, or slice small pieces for an after-dinner treat. Whether frosted or lightly dusted, it’s a simple, comforting dessert that makes any day feel a little more special.
